Our American Fluffy Pancakes

OK, so we might be a bit late to the party for Pancake Day (or a bit early depending on which way you look at it) but in our opinion, there can never be a bad day to make pancakes – either for breakfast or brunch! The STAUB pancake pan can be used to cook either American fluffy pancakes (the type we are making) or a more traditional crepe style.

To make around 8-10 pancakes you will need the following:

Ingredients

200g self-raising flour
1 ½ tsp baking powder
2 tbsp golden caster sugar
3 large eggs
25g melted butter (plus some extra for cooking with)
200ml milk
vegetable oil, for cooking

Method

Stage 1

Using a STAUB small skillet pan, melt 25g of butter on the hob and leave to cool slightly.

Stage 2

Mix the self-raising flour, baking powder, golden caster sugar and a pinch of salt together in a large bowl.

Stage 3

Create a well in the centre with the back of a spoon then add the whisked eggs, melted butter and the milk.

Stage 4


Whisk together either by hand or an electric whisk until smooth, then pour into a jug ready to use.

Stage 5

Make sure your pan is well oiled with the vegetable oil and butter. I always pour some over the pan first then use some kitchen roll to mop up the excess and ensure an even distrubution of oil across the pan.

Stage 6

Once your STAUB pancake pan is at a medium to high heat (not too high as you don’t want to burn the pancakes) pour the mixture onto the pan slowly, you can fit around 2-3 pancakes (depending on the size you want) at any one time. Wait for the bubbles to start appearing across the pancake and then flip! The outer pancake should be golden in colour, don’t worry if its a little under done you can always flip it back in a few minutes once the other side has browned a bit. Cook for around 2-3 mins on each side but make sure you don’t flatten the pancakes with a spatula as you want to keep them as fluffy as possible.

Repeat stages 5 and 6 until there is no mixture left!

Stage 7

Stack your pancakes high and serve with your favourite toppings – enjoy!
